The perfect warming porridge for the colder months of the year. Slowly cooked, with soft sweet cinnamon-stewed apples on top. I love having this with creamy coconut yogurt. It’s like dessert for breakfast!
Ingredients
3 tbsp
jumbo oats (gluten-free)
1/2 tsp
cinnamon
1/2 tsp
nutmeg
1/2 tsp
cacao
1/2 tsp
vanilla extract
200 ml
oat milk
1 tbsp
chia seeds
1
apple, chopped into think chunks
1/2 tbsp
maple syrup, plus extra to drizzle
toppings:
walnuts, coconut flakes, cinnamon, coconut yogurt
1 tsp
nut butter (optional)
How to make
1
To make cinnamon apple oatmeal, start by cooking cinnamon apple chunks in a small saucepan with 4 tbsp of water. Sprinkle cinnamon on top and cook on medium heat until the mixture starts to bubble. Then turn down the heat to low and let the apples simmer for 5 minutes until they become soft and the liquid has evaporated.
2
Next, add oats, chia seeds, cinnamon, cacao, nutmeg, oat milk, maple syrup, and vanilla extract in the same saucepan. Gently heat the mixture on medium heat, stirring consistently for 5 minutes until you reach your desired consistency. If you want a creamier consistency, add more milk. If you prefer a thicker consistency, cook for longer.
3
Finally, pour your oats into your bowl, top with the cinnamon apple, coconut yogurt, walnuts, and maple syrup.
