These simple berry oat cups are filled with fresh yoghurt and topped with fresh berries. It’s healthy, fibre- and protein-rich. They are the perfect snack or one-bit breakfast.
Ingredients
80 g
rolled oats
120 g
peanut butter
3 tbsp
maple syrup
50 g
vegan yoghurt
30 g
mixed red fruit (strawberries, blueberries, pomegranates and raspberries)
How to make

Preheat the oven to 180°C

Add the oats, peanut butter and maple syrup into a large mixing bowl and mix until well combined.

Spray a muffin tin with non-stick cooking spray (or coconut oil) and divide the oats mixture evenly between 10 cups.

Push the oats mixture to the edges and bottom to form little cups.

Bake the cups in the oven for about 12 minutes.

Remove from the oven and let cool for about 10 minutes before removing from the pan.

Evenly fill each granola cup with yoghurt and top with sliced strawberries, blueberries, raspberries and pomegranates.
