This vegan scrambled tofu is very aromatic and absolutely delicious. It’s such a healthy and nutritious meal with a great dose of protein and vegetables. It makes the perfect vegan breakfast or lunch!
Ingredients
200 g
firm tofu
1
red onion
60 g
spinach
1
tomato
100 ml
oat milk
2 tsp
nutritional yeast (vegan cheese)
1
clove of garlic
1 tsp
turmeric
1/2 tsp
graham masala
1/2 tsp
chilli flakes
pinch of
salt and pepper
2 tbsp
hummus
2
slices of bread
1 tbsp
olive oil
How to make

Take a small bowl and add the oatmilk with the garlic powder, the yeast flakes, turmeric and a pinch of chilli powder. Season to taste with salt and pepper and mix well.

Chop the onion finely and heat a little oil in the pan to fry the onion. Crumble the tofu and add this to the pan. Stir fry for 2 minutes on medium heat.

Then add the spiced oatmilk to the pan, lower the heat and let the tofu simmer for a few minutes.

Cut the tomato into fine pieces and coarsely slice the spinach and add to the tofu. Taste, season if necessary and let simmer for another few minutes.

Serve the tofu scramble with a little bit hummus and toasted bread.
