Try this healthy blueberry banana bread with coconut. It’s made in minutes, super moist, tender, and topped with fresh blueberries and dark chocolate.
Ingredients
2 ripe
bananas
200 ml
almond milk
2
Medjool dates, pitted
50 g
tahini
250 g
coconut flour (or flour of choice)
1 tsp
baking powder
1 tsp
cinnamon
pinch
of salt
100 g
blueberries
20 g
dark chocolate
sea salt
How to make

Preheat the oven to 180°C.

Add the bananas to a mixing bowl and mash. Add the rest of the wet ingredients and combine.

Mix well with all the dry ingredients except the blueberries and chocolate.

Pour the batter into a loaf tin. Top with the blueberries and chopped dark chocolate.

Bake in the oven for around 45-60 minutes. Check with a small wooden stick if it comes out dry. Add a pinch of sea salt and let it cool for one hour. Enjoy immediately or freeze up till three months.
