Are you looking for a simple way to pack more protein? This nutritious burrito bowl is perfect! It contains high protein sources, including black beans, quinoa, edamame beans and tahini. This is also an ideal meal to meal-prep.
Ingredients

black beans, drained & rinsed
200 g
cooked quinoa
1 tbsp
sesame oil
1 tsp
paprika powder

red chilli, finely sliced

lemon, zested
100 g
frozen edamame beans, defrosted
100 g
baby leaf spinach, washed & shredded
pinch
of sea salt
2 tbsp
tahini
2 tbsp
soy sauce
1 tbsp
sesame oil

lemon, juiced
How to make

Cook the quinoa according to the package and let it cool.

Tip the beans, quinoa, oil, paprika, chilli, lemon zest, edamame and spinach into a large bowl. Add a generous pinch of salt and toss together.

Place all ingredients into a bowl and whisk until combined to make the dressing. Pour over the quinoa mix and stir until everything is coated in the sauce.
