This Butter Bean Salad is the perfect summer salad. It’s what to make when you don’t feel like cooking. Healthy and perfect for BBQs & picnics.
Ingredients

avocado
400 g
tin of butterbeans, rinsed, drained
1/2
cucumber, cut into quarters
1
red pepper, cut into thin strips
100 g
small tomatoes, halved
25 g
kalamata olives, pitted
1
large handful of dill, roughly chopped
1
lemon, juiced
3 tbsp
extra virgin olive oil
100 g
vegan feta
salt and pepper
1
large handful of basil leaves
How to make

In a large mixing bowl, combine the butterbeans, cucumber, red pepper, tomatoes, olives, dill, lemon juice, olive oil and seasoning to taste. Toss gently to combine.

Crumble in the feta and toss once or twice more to mix through. Spoon the salad onto a large plate or bowl.

Cut the avocado into cubes and add to the top of the salad. If desired, season the avocado with some salt, pepper, and olive oil. Finish with some fresh basil leaves scattered over.
