This salty, crunchy, fresh cucumber salad is your new favorite side dish. I almost ate most of the bowl, because it’s really good and easy to prep. Perfect for as a side dish with a Christmas dinner.
Ingredients

cucumber
1 tbsp
salt
1,5 tsp
red pepper flakes
1,5 tsp
oregano
1,5 tsp
sesame seeds
1,5 tsp
cumin
1 tbsp
olive oil
100 g
vegan cream cheese
100 g
vegan feta cheese
1/2
lemon, zest
25 g
fresh dill
60 g
vegan yoghurt, unsweetened
2 tbsp
pine nuts, toasted
1 tsp
salt and pepper
How to make

Add the cucumbers and the salt to a bowl and allow to sit for 15 minutes, then drain, rinse, pat dry and place in a new bowl. Add the spices and the oil. Toss to combine.

Make the whipped cream cheese. Add the cream cheese, vegan feta, vegan yogurt, dill, lemon zest, salt and pepper to a food processor and process until mostly smooth.

Serve cucumbers over the dip and top with sesame seeds, pine nuts and some extra olive oil.
