These 5-minute Cucumber Boats are filled with mashed avocado. They are easy to make and are crunchy, salty, and satisfying! Garnish with a sprinkle of mixed seeds and coconut flakes for a light, refreshing, and crunchy snack!
Ingredients

cucumber

avocado
1 tbsp
fresh basil
1/2
juice of a lemon
1 tsp
olive oil
2 tbsp
mixed seeds
1 tbsp
coconut flakes
pinch of
flakey sea salt
How to make

Slice cucumber in half lengthwise. Using a spoon, de-seed the cucumber and then blot both sides dry with a paper towel.

Mash the avocado until smooth, squeeze half a lemon, add chopped fresh basil, 1 tsp olive oil and add some pepper and salt.

Spread on mashed avocado and add some mixed seeds and coconut flakes. Sprinkle on a pinch of flakey sea salt, and you’re ready!
