These pancakes are so simple and delicious with fruity blueberries and warm nectarine. The banana and oats make the pancakes sweet. It’s packed with proteins and fibre to keep you satisfied and nourished!
Ingredients
100 g
oats
200 ml
almond milk
2
bananas
2 tbsp
vanilla protein powder
1 tbsp
cinnamon
1 tbsp
coconut oil
pinch
of salt
1
nectarine, baked
100 g
blueberries
4 tbsp
plant-based yoghurt of choice
1 tbsp
coconut grater
2 tbsp
pecannuts
maple syrup
How to make

Place the oats into a food processor and pulse until they form a dusty flour, about 2 minutes.

Mash the bananas and add them to the food processor with almond milk, protein powder, and cinnamon. Mix well to remove any lumps.

Place a frying pan over medium heat and add a tablespoon of coconut oil.

Add a heaped tablespoon of the pancake mixture into shaped circles. Bake for 2-3 minutes until the bottom has cooked. Flip to the other side for another 2 minutes.

In the meantime, slice the nectarine and add it to a baking dish. Add some cinnamon and maple syrup and bake for 10 minutes in a preheated oven of 200 degrees Celcius. Add the blueberries at the last minute.

Once everything is cooked, staple the pancakes, add plant-based yoghurt, baked nectarine and blueberries and sprinkle some coconut and nuts.
