I make this salad (almost) every day. It is super filling, very healthy and has a fresh bite. I make it within 15 minutes.
Ingredients
60 g
lettuce
1/2
cumcumber
4 tbsp
quinoa
75 g
sun-dried tomatoes
1/2
avocado
1
date
1 tsp
pumpkin seeds
10 g
cress
1 tbsp
hummus
1 tbsp
tahini
1/2 tbsp
balsamic vinegar
1/2 tbsp
apple cider vinegar
pinch
salt and pepper
How to make

Weigh 35 g quinoa and cook according to package directions (10 min). After that, let the quinoa cool well.

Meanwhile, wash and cut the vegetables. Put them together with the lettuce in a bowl and mix. Drain the sun-dried tomatoes to remove all the oil. Peel the avocado and the date.

Mix the dressing in a container until smooth. Then add the dressing to the lettuce and vegetables and 4 tablespoons of quinoa with salt and pepper.

Place the 1/2 avocado and cress on top. Enjoy!
