Italian cuisine is so much more than just pizza and pasta. What would you say to a delicious vegan quiche? This vegan quiche is simple and full of flavor. Tip: Would you like to give the quiche a nice colored edge? Then spread the edge with peach jam or vegan cream.
Ingredients

spelt flour
75 g
vegan butter, cold and cubed
40 ml
cold water
pinch
of salt

tofu

vegan oat cream
3 tbsp
chickpea flour
2 tbsp
olive oil

garlic cloves
½ tsp
dried oregano
2 tbsp
nutritional yeast
150 g
honey tomatoes, halved
½
red onion, cut into pieces
handful of
fresh basil
1 tbsp
vegan parmesan cheese
How to make

To make the pastry, sift the flour and a good pinch of salt into a bowl, then rub in the butter with your fingertips until it resembles fine breadcrumbs. Gradually add 40ml of cold water, continuously mixing until it comes together to form a rough dough, adding a splash more water, if needed. Bring it together with your hands, wrap in clingfilm and place in the fridge to rest for 30 minutes.

Preheat the oven at 180˚C. Put the tofu, oat cream, chickpea flour, olive oil, garlic, yeast flakes, oregano and salt together in a food processor and blend until creamy. Is it too dry? Add a little water bit by bit until it is smooth. (Don't have a food processor? Then put everything in a measuring cup and puree with a hand blender.)

On a flour-dusted surface, roll out the rested dough to roughly ½cm thick. Roll the pastry up around the rolling pin, then carefully unroll it to cover a 23cm loose-bottomed tart tin. Gently press the pastry into the tart tin, moulding it to the tin as you go (don’t worry if it breaks – patch up any holes with spare pastry).

Spread the tofu filling over the bottom. Then garnish with halved honey tomatoes and slices of red onion. Sprinkle with olive oil, to prevent the tomatoes from drying out. Season with salt, pepper and extra oregano.

Place the quiche in the oven for 45 to 50 minutes, or until just set. Leave to cool slightly, then serve with fresh basil and vegan parmesan cheese on top. Serve with a fresh salad and enjoy!
