Here is how to make this delicious gluten-free millet granola with cinnamon. It’s packed with protein and fibre and has a delightful nutty-sweet flavour. Serve the granola with yoghurt or milk, or sprinkle it over smoothie bowls or salads.
Ingredients
120 g
puffed millet (or any other puffed grain)
50 g
chopped pecan nuts
25 g
shaved almonds
1/2 tsp
turmeric
1/2 tsp
ground cinnamon
3/4 tsp
salt
1/2 tsp
baking soda
1/2 can
coconut milk
55 g
coconut sugar
2 tbsp
maple syrup
How to make

Start making the vegan caramel; place a small pan on low heat and add coconut milk and coconut sugar. Let this slowly cook for about 25-30 minutes and keep stirring until it's golden and has a smooth texture.

Add puffed millet, pecan nuts, shaved almonds, all the spices and baking powder to a bowl. Stir.

Add the vegan caramel when it's done and maple syrup. Lay on a baking tray and bake for 15 minutes at 350F or 180C. Flip the granola halfway.
