A healthy, flavorful Parlsey Stir-Fry with mushroom, bell pepper and tofu in a Mediterranean marinade paired with a grain of choice. Vegan, gluten-free, well-balanced, easy weeknight dinner ready in under 30 minutes!
Ingredients
200 g
cooked grain of choice to serve (barley, quinoa, brown, basmati or jasmine rice, soba noodles)

red bell pepper

yellow bell pepper
250 g
mixed mushrooms
200 g
extra firm tofu, cubed
3 tbsp
olive oil
2 tbsp
lemon juice
2 tbsp
fresh parsley
1/2 tsp
cumin
1 tsp
oregano
pinch of
salt and black pepper
How to make

Preheat oven to 200 C.

Prep and cut all veggies and tofu, then add into a large bowl.

Whisk together the marinade, pour on top of the veggie mixture and mix together well.

Pour on a baking sheet lined with parchment or into a casserole dish. Bake for 25-30 minutes.

Pair with a grain of choice (white or brown rice or quinoa) with fresh parsley on top.
