These no-bake peanut butter bars are rich, creamy and delicious, topped with a layer of chocolate. Easy to make and all plant-based!
Ingredients
225 g
puffed buckwheat (or puffed rice)
250 g
peanut butter
250 ml
maple syrup
1 tsp
vanilla extract
75 g
dark chocolate, 70%
1 tbsp
vegan vanilla protein
1 tsp
coconut oil
1 tsp
sea salt (for topping)
How to make

Add puffed buckwheat, peanut butter, maple syrup, protein powder, and vanilla extract to a bowl. Mix until well incorporated and a sticky mixture forms.

Press the mixture firmly into a loaf pan. It should cover the pan evenly.

Melt dark chocolate and coconut oil in the microwave or over the stove.

Coat the top of the buckwheat peanut butter mixture with dark chocolate.

Sprinkle sea salt on top.

Freeze and enjoy!
