These roasted cauliflower steaks with hummus, olives, and vegan feta are delicious! You can serve it with Hasselback sweet potatoes if you like. It works as the perfect main dish, a side dish to share, or however you like it!
large head of cauliflower or 2 small
crushed red pepper
vegan feta cheese
handful of micro-greens
How to make
Preheat the oven to 220 degrees C.
Slice the cauliflower head into 1 1/2 inch steaks or simply break it into florets. Place it on a baking sheet.
Combine the olive oil, maple syrup, herbs de Provence, salt, and pepper in a small bowl. Next, brush both sides of the cauliflower steaks. Roast the cauliflower for 30-35 minutes, flipping halfway. Each side should be browned.
Once the cauliflower is finished, spread some hummus on a plate or in a bowl and top with the cauliflower. Drizzle with a touch of olive oil if desired. Sprinkle with the olives, feta and microgreens.
