Did you know that eggplant and zucchini are vegetables high in nutrients, antioxidants and fibre? Falafel will add a good texture and makes it the perfect Middle East dish! It makes them an excellent addition to a healthy and balanced lifestyle.
Ingredients

zucchini
1
eggplant
300 g
falafel
2 tbsp
olive oil
4 tbsp
hummus
fresh mint, finely chopped
fresh basil, finely chopped
pepper and salt
2 tbsp
granola or nuts as a topping
How to make

Preheat your oven to 200 C. Line a baking tray with greaseproof paper.

Lay the aubergine and zucchini slices evenly on the baking tray. Drizzle some olive oil, salt and pepper. Place in the oven and bake for 30 minutes.

Remove the Falafels from their packaging, and place these in the oven with the vegetables. Bake for a further 12 minutes.

When the vegetables and falafels are cooked, remove them from the oven.

Make the hummus swoosh. Use a large serving spoon and place a dollop on one side of the plate. Roughly create a smooth motion in the shape of a half circle on one side and then in the opposite direction so that you will cover all edges of the plate.

Place the eggplant, zucchini and falafels into the centre of the hummus. Then garnish with finely chopped mint and basil and granola or nuts.
