Vegan Tofu Poke Bowl with marinated tofu in a soy-ginger sauce with edamame, cabbage, avocado and sushi rice. Perfect for lunch, dinner or make-ahead meals, and can be whipped up in as little as 20 minutes.
Ingredients

white (sushi) rice
1/2
avocado
50 g
edamame beans
2 tbsp
pickled red cabbage
100 g
marinated tofu
40 ml
soy sauce
1/2
lime
1 tsp
ginger, freshly grated
1 tbsp
agave syrup
1 tbsp
mirin
1 tbsp
hot sauce
1 tbsp
cilantro, roughly chopped
1 tsp
sesame seeds, to serve
How to make

Boil the rice according to the package. Drain and let it sit.

Cut the tofu into small cubes and let it sit in the marinade mixture for at least 10 minutes.

Serve with avocado, edamame, and rice and top with black sesame, fresh cilantro and red cabbage.
