This is a simple, delicious dinner for any day of the week. I love the taste of the falafel mixed with the roasted veggies and soft avocado. The dressing makes it tasty.
Ingredients

zucchini

red pepper
100 g
cherry tomatoes

vegan falafel
1/4
avocado
2 tsp
olive oil
1 tsp
maple syrup
1 tsp
tamari
1/2
lemon, juiced
1 tbsp
olives
1 tbsp
sundried tomatoes
pinch of
pepper and salt
How to make

Preheat the oven to 190 Degrees Celcius.

Chop the zucchini in quarters and the red pepper into slices.

Place into a baking tray and put the cherry tomatoes in it too. Drizzle olive oil, pepper and salt and roast for 20 minutes.

After 15 minutes, cook the falafel in the baking tray for 5 minutes.

Meanwhile, slice the sundried tomatoes and olives into small pieces.

Make the dressing by whisking the olive oil, maple syrup, and tamari and squeeze half a lemon.

Remove the tray from the oven and stir through the dressing; add avocado and serve with salt and black pepper.
