Pancakes often contain cow’s milk and egg. But of course that is not necessary! The cow’s milk can easily be replaced by any vegetable milk, such as soy milk, almond milk or oat milk. The egg can be substituted, but it does not always have to be substituted, you can easily make pancakes with just milk and flour.

It is possible to add a substitute for egg, to make a slightly more thick batter:

instead of 1 egg:

● 1 smashed banana

● 60 millilitre applesauce

● 2 tablespoon of No-Egg egg replacer (available in some supermarkets and most health food shops)

● 3 tablespoon of cornstarch

● 1 tablespoon flaxseed with 3 tablespoons of water (leave to soak for 5 minutes)

Each product has its own binding properties and taste, so experiment with the possibilities! You can add any of the above options to the basic recipe. I use 1 mashed banana in this pancake recipe.

Variations: Apple pancakes! For apple pancakes, first briefly fry a few slices of apple and possibly sultanas and nuts in the pan, and then pour the batter over these. Delicious with maple syrup and cinnamon. You can also bake banana slices with the pancakes. Spread your pancake with a delicious layer of peanut butter or pure chocolate spread!
