This salad is filled with so much texture and flavour. The fresh lemon vinaigrette coats the carrots, with the crunch of the crispy peanuts and the soft olives bringing it all together so nicely. I love serving this with an extra dollop of hummus, but it’s also delicious. It’s a healthy, delicious, and refreshing plant-based salad!
