This baked sweet potato is filled with Mexican vegetables and pulled oats. Pulled oats are made from pure northern oats, broad beans and peas. If you can’t find pulled oats, replace it by tofu or vegan minced meat. Serve this sweet potato as a main dish and add a few tablespoons of (wild) rice to it and your meal is ready!
