When you want dinner on the table fast, rustle up this speedy gnocchi dish; it’s in under 15 minutes! Packed with zucchini, mint and crunchy hazelnuts. It’s my favourite midweek meal!
I used spinach gnocchi, which gives a green colour, but plain gnocchi also works!
Feel free to add some cream cheese, tempeh, tofu or vegan cheese, too, if you’d like.
